Project objectives:
The project aims to valorise two important chains:
Chitosan/chitin chain: extraction of chitosan from fishing residues like shrimp shells and crab residues, by using novel ultrasonication technology.
Macroalgae chain: algae are rich in a wide range of nutrients and bioactive compounds that may have benefits for human health. Novel algae-based ingredients for functional foods and feed (i.e., alginate) will be investigated and implemented by expert partners involved along the chain. At the end, functional foods and feed integrated with the chitosan chain could be developed.
